Ingredients

  • 8 oz pasta spaghetti or your choice
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil for cooking chicken
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the chicken with garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a skillet and cook the chicken for 6-7 minutes per side. Slice into strips once done.
  • In the same skillet, melt butter and add chicken broth and heavy cream. Let it simmer for 3-4 minutes.
  • Stir in lemon zest, lemon juice, and Parmesan cheese, cooking until smooth.
  • Add the cooked pasta to the sauce, tossing to coat. Add sliced chicken on top.
  • Garnish with fresh parsley and serve warm.

Notes

For extra flavor, you can add a pinch of red pepper flakes for a little heat. If you prefer a lighter version, swap the heavy cream for coconut cream for a dairy-free alternative. Enjoy your lemon chicken pasta!
