- 8 oz pasta spaghetti or your choice
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp olive oil for cooking chicken
- 1 cup heavy cream
- 1/2 cup chicken broth
- Zest of 1 lemon
- Juice of 1 lemon
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter
- Fresh parsley, chopped (for garnish)
Cook the pasta according to package instructions. Drain and set aside.
Season the chicken with garlic powder, onion powder, salt, and pepper.
Heat olive oil in a skillet and cook the chicken for 6-7 minutes per side. Slice into strips once done.
In the same skillet, melt butter and add chicken broth and heavy cream. Let it simmer for 3-4 minutes.
Stir in lemon zest, lemon juice, and Parmesan cheese, cooking until smooth.
Add the cooked pasta to the sauce, tossing to coat. Add sliced chicken on top.
Garnish with fresh parsley and serve warm.
For extra flavor, you can add a pinch of red pepper flakes for a little heat. If you prefer a lighter version, swap the heavy cream for coconut cream for a dairy-free alternative. Enjoy your lemon chicken pasta!
