  • 1 cup onion diced
  • 3 cloves garlic minced
  • 1 head cauliflower chopped
  • 4 cups vegetable broth

  • 1 cup shredded cheese for serving
  • 1 cup crispy bacon for garnish

Cooking Steps

  • Sauté diced onions and minced garlic in a pot over medium heat until fragrant and translucent, about 3-4 minutes.

  • Add chopped cauliflower and vegetable broth. Bring to a simmer and cook until the cauliflower is tender, about 10–12 minutes.

  • Blend the soup until smooth and serve it with your favorite toppings.

Notes

This Loaded Cauliflower Soup is best enjoyed fresh, but leftovers can be refrigerated for up to 4 days. It also freezes well for up to 2 months. To reheat, simply warm it on the stovetop, adding a splash of broth for creaminess.
