Ingredients
  

Beef Mixture:

  • 1 lb ground beef
  • 4 cloves garlic minced
  • ¾ cup water
  • 1 1 oz packet taco seasoning
  • 1 16 oz can refried beans

Nachos:

  • 14 oz tortilla chips thick/sturdy
  • 3 ¾ cups shredded cheese cheddar or blend
  • ½ cup diced bell peppers red + green
  • 1 jalapeño sliced
  • ¼ cup diced red onions
  • cup sliced black olives
  • 2 Roma tomatoes diced
  • 2 green onions sliced
  • 3 tbsp chopped cilantro

For Serving:

  • Guacamole
  • Salsa
  • Sour cream

Instructions
 

  • Preheat oven to 350°F and prep all ingredients.
  • In a skillet, brown ground beef over medium-high heat (7–10 mins). Drain excess grease.
  • Stir in garlic, taco seasoning, and water. Simmer until thickened.
  • Add refried beans, mix well, and heat through.
  • Layer half the tortilla chips on a baking sheet. Spoon half the beef mixture and cheese over chips.
  • Add remaining chips, beef, and cheese.
  • Top with bell peppers, jalapeños, onions, and olives.
  • Bake for 15 minutes, then garnish with tomatoes, green onions, and cilantro. Serve with salsa, guac, and sour cream.

Notes

For crispier nachos, broil for the last minute. For a twist on this loaded nachos recipe, swap beef for shredded chicken or black beans.
