- ½ cup 1 stick unsalted butter
- 1 cup all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 cup granulated sugar
- 1 cup buttermilk
- 1 tbsp vanilla extract
- 1 tbsp lemon extract
- 1 21 oz can lemon pie filling
Preheat your oven to 350°F (175°C).
Place butter in a 9x9-inch baking dish and melt in the oven for 3–4 minutes.
In a bowl, mix flour, baking powder, salt, and sugar.
Stir in buttermilk, vanilla, and lemon extract until just combined.
Pour batter over the melted butter. Do not stir.
Dollop lemon pie filling evenly over the batter.
Bake for 45–55 minutes, until edges are golden and bubbly.
Cool slightly before serving warm.
