Ingredients
  

  • 2 cups butter beans cooked or canned
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1/4 cup heavy cream
  • 1 tbsp fresh parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add diced onion and garlic, cooking until softened.
  • Stir in cumin, paprika, thyme, salt, and pepper. Cook for 1 minute.
  • Add butter beans and vegetable broth to the pan. Bring to a simmer and cook for 10 minutes.
  • Stir in tomato paste and heavy cream, simmering for 5-7 minutes until the sauce thickens.
  • Garnish with fresh parsley and serve hot.
