- 1 tsp olive oil
- 1½ lbs boneless skinless chicken breasts or thighs diced
- 2 tsp Italian seasoning divided
- Salt and pepper to taste
- ½ cup diced carrots
- ½ cup diced celery
- ½ cup diced onion
- ¼ cup diced sun-dried tomatoes
- 3 garlic cloves minced
- ¼ cup flour
- 2 tbsp tomato paste optional
- 6 –8 cups chicken broth
- 6 oz small shell pasta
- 1 cup heavy whipping cream
- ½ –1 cup grated Parmesan Reggiano cheese
- 2½ –3 cups fresh spinach
In a large pot, heat olive oil over medium-high heat. Add chicken, 1 tsp Italian seasoning, salt, and pepper. Cook until browned, 4–5 minutes.
Add carrots, celery, onions, sun-dried tomatoes, and garlic. Cook for 3–4 minutes until softened.
Sprinkle flour over the mixture, stirring well. Add tomato paste if using and mix to combine.
Gradually pour in chicken broth while stirring. Scrape the bottom of the pot to deglaze.
Bring to a boil. Add pasta and remaining 1 tsp Italian seasoning, salt, and pepper. Cover and simmer on low for 20 minutes.
Stir in heavy cream, spinach, and Parmesan cheese. Simmer uncovered for 5 more minutes.
Taste and adjust seasoning as needed. Serve hot.
