Ingredients
  

  • 2 cups Hungry Jack pancake mix or any complete pancake mix
  • 1 ½ cups water
  • 1 pound breakfast sausage
  • 1 cup shredded cheddar cheese
  • ¼ cup maple syrup
  • Nonstick cooking spray or oil for greasing pan
  • Optional: extra maple syrup, for dipping

Instructions
 

  • Preheat oven to 400°F and grease a mini muffin pan with cooking spray.
  • In a skillet over medium-high heat, brown the sausage until fully cooked. Crumble and drain.
  • In a large bowl, mix pancake mix and water until smooth.
  • Stir in cooked sausage, shredded cheddar, and maple syrup until well combined.
  • Spoon batter into muffin cups, filling nearly to the top.
  • Bake McGriddle Bites for 12–15 minutes, until golden brown and cooked through.
  • Cool for a few minutes before serving.
  • Serve warm with extra maple syrup, if desired.

Notes

To keep McGriddle Bites fluffy, avoid overmixing the batter. For a fun twist, swap sausage with cooked bacon or add diced jalapeños for spice.
