Pasta

  • 2 cups pasta cooked and cooled

Vegetables

  • 1 cup chickpeas canned, drained, and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced

Cheese

  • 1 cup feta cheese crumbled

Dressing

  • 1 to taste olive oil extra virgin
  • 1 to taste lemon juice freshly squeezed

Preparation Steps

  • Cook the pasta according to package directions until al dente, then rinse under cold water to cool.

  • In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, and feta cheese.
  • Add the cooled pasta and drizzle with olive oil and lemon juice, mixing well.

Notes
