This Mediterranean Grilled Cheese is a flavorful twist on a classic. With creamy cheeses, sun-dried tomatoes, and olives, it’s easy and irresistible for any beginner cook.

Ingredients
  

  • 1 cup chopped spinach leaves
  • 1/2 cup shredded mozzarella or cheese of choice
  • 2 tbsp crumbled feta cheese
  • 2 tbsp ricotta cheese or Greek yogurt
  • 2 tbsp sun-dried tomatoes, drained and chopped
  • 1 tbsp sliced black or Kalamata olives
  • 4 slices whole grain bread or crusty bread of choice
  • 2 tbsp butter

Instructions
 

  • In a microwave-safe bowl, microwave the spinach for 45 seconds or until wilted.
  • Add mozzarella, feta, ricotta, sun-dried tomatoes, and olives. Stir to combine.
  • Spread the mixture onto 2 slices of bread. Top with remaining slices.
  • Spread butter on the tops of each sandwich.
  • Heat a skillet over medium-low heat (no oil needed).
  • Place sandwiches butter-side down and spread remaining butter on top.
  • Cook for about 2–3 minutes per side, flipping carefully once golden brown.
  • Slice and serve your Mediterranean Grilled Cheese hot.

Notes

Tip: Use low heat to ensure the cheese melts before the bread over-toasts.
Variation: Add a swipe of pesto or roasted red pepper for extra flavor.
