This Mediterranean Grilled Cheese is a flavorful twist on a classic. With creamy cheeses, sun-dried tomatoes, and olives, it’s easy and irresistible for any beginner cook.

- 1 cup chopped spinach leaves
- 1/2 cup shredded mozzarella or cheese of choice
- 2 tbsp crumbled feta cheese
- 2 tbsp ricotta cheese or Greek yogurt
- 2 tbsp sun-dried tomatoes, drained and chopped
- 1 tbsp sliced black or Kalamata olives
- 4 slices whole grain bread or crusty bread of choice
- 2 tbsp butter
In a microwave-safe bowl, microwave the spinach for 45 seconds or until wilted.
Add mozzarella, feta, ricotta, sun-dried tomatoes, and olives. Stir to combine.
Spread the mixture onto 2 slices of bread. Top with remaining slices.
Spread butter on the tops of each sandwich.
Heat a skillet over medium-low heat (no oil needed).
Place sandwiches butter-side down and spread remaining butter on top.
Cook for about 2–3 minutes per side, flipping carefully once golden brown.
Slice and serve your Mediterranean Grilled Cheese hot.
Tip: Use low heat to ensure the cheese melts before the bread over-toasts.
Variation: Add a swipe of pesto or roasted red pepper for extra flavor.
