Instructions
In a bowl, whisk together the lemon juice, olive oil, and honey until emulsified.
In a large bowl, combine the chopped kale and massaging it until tender.
Add the mixed berries and poppy seeds to the kale.
Drizzle the dressing over the salad just before serving and toss gently.
Notes
Best enjoyed fresh, but can be stored in the fridge for 2-3 days without dressing.
