Ingredients
  

  • 4 cups kale chopped
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1 1/4 cup lemon juice
  • 1 cup olive oil
  • 1 tablespoon poppy seeds
  • 1 tablespoon honey optional

Instructions
 

  • In a bowl, whisk together the lemon juice, olive oil, and honey until emulsified.
  • In a large bowl, combine the chopped kale and massaging it until tender.
  • Add the mixed berries and poppy seeds to the kale.
  • Drizzle the dressing over the salad just before serving and toss gently.

Notes

Best enjoyed fresh, but can be stored in the fridge for 2-3 days without dressing.
