For the Chicken:
- 4 boneless, skinless chicken thighs or breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tbsp olive oil
For the Potatoes:
- 1 lb baby potatoes, halved
- 1 tbsp olive oil
- ½ tsp garlic powder
For the Garlic Herb Butter Sauce:
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp fresh thyme, chopped
- 1 tsp rosemary, chopped
- 2 tbsp parsley, chopped
- Optional: ¼ cup chicken broth for more sauce
Boil halved baby potatoes for 5–7 minutes until just tender. Drain and pat dry.
Season chicken with salt, pepper, and smoked paprika.
Heat olive oil in a large skillet over medium-high. Sear chicken 4–5 minutes per side, then set aside.
In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
Add thyme and rosemary to the skillet and stir.
Toss in the potatoes and cook until golden and crisp on the edges.
Return chicken to the pan. Spoon sauce over and simmer, covered, until chicken is fully cooked.
