Ingredients
  

First Group

  • 1 cup onion diced
  • 1 lb sausage sliced
  • 2 medium potatoes diced

Second Group

  • 4 cups kale chopped
  • 4 cups broth chicken or vegetable
  • 2 cloves garlic minced

Instructions
 

First Group

  • In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Add diced onion and minced garlic, cooking for 2 more minutes.

Cooking the Soup

  • Stir in the diced potatoes and broth. Bring to a gentle boil, then reduce the heat and let simmer for 15 minutes until potatoes are tender. Fold in the kale and simmer for an additional 5 minutes until wilted.

Notes

Allow the soup to cool before storing. It can be refrigerated for up to 5 days, or frozen for 3 months. Reheat gently on the stovetop or in the microwave.
