- 1 tablespoon olive oil
- 1 small yellow onion chopped
- 2 cloves garlic minced
- 16 ounces potato gnocchi
- 24 ounces marinara sauce
- 1 teaspoon Italian seasoning
- salt to taste
- pepper to taste

- 1 cup shredded mozzarella cheese
- 0.25 cup grated Parmesan cheese
- fresh basil for garnish
Main
Preheat oven to 425°F.
In a 10-inch oven-safe skillet, heat olive oil over medium heat.
Add onion and sauté until translucent, about 5 minutes.
Add garlic and cook until fragrant, about 1 minute.
Stir in gnocchi, marinara sauce, Italian seasoning, salt, and pepper. Bring mixture to a simmer.
Topping
Sprinkle mozzarella and Parmesan evenly over the surface.
Transfer skillet to the oven and bake until cheese is melted and bubbly, about 10 minutes.
Remove from oven, garnish with basil, and serve immediately.
In my first trial, I found that sautéing the onion until nearly translucent brings out a sweeter flavor.
After refrigerating leftovers overnight, reheated gnocchi developed deeper tomato notes and held its texture well.
I recommend using an oven-safe skillet you’ve preheated slightly to prevent the sauce from sticking during baking.
