- 2 cups pancake mix
- 1¼ cups milk
- 1 large egg
- 1 lb breakfast sausage
- ½ cup maple syrup plus more for serving
- Butter or oil for greasing the skillet
In a skillet over medium heat, cook the sausage until browned and cooked through. Drain and set aside.
In a bowl, whisk together pancake mix, milk, and egg until smooth. Let it rest for 5 minutes to thicken.
Heat a greased skillet over medium heat. Pour batter to form small pancakes. Cook until bubbly, flip, and cook the other side. Make at least 6.
In a greased baking dish, layer pancake, sausage, and a drizzle of maple syrup. Repeat until all are used, ending with a pancake on top.
Optionally pour extra syrup over the top.
Bake at 350°F (175°C) for 10–15 minutes to warm and meld flavors.
Slice and serve warm with more syrup on top.
