Peach Filling:
- 4 pounds fresh peaches 8–9 peaches, peeled and sliced
- 1 tbsp lemon juice
- ¼ cup brown sugar
- ½ cup granulated sugar
- 1 tsp pure vanilla extract
- 1½ tbsp cornstarch
- 1 tsp ground cinnamon
- Pinch of sea salt
Cobbler Topping:
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 1½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp ground cinnamon
- ½ tsp sea salt
- ½ cup salted butter, cold
- ¾ cup whole milk
- 1 tsp pure vanilla extract
- 1 –2 tbsp turbinado sugar for topping
Preheat oven to 375°F and grease a 9x13” baking dish.
In a bowl, combine peaches, lemon juice, and vanilla.
Mix brown sugar, granulated sugar, cinnamon, cornstarch, and salt in another bowl. Stir into peach mixture.
Spread peaches evenly in baking dish.
In a separate bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
Cut in cold butter until crumbly. Stir in milk and vanilla until just combined.
Drop topping over peaches and sprinkle with turbinado sugar.
Bake for 35–40 minutes until topping is golden and filling is bubbly.
For the best peach cobbler, use ripe, fresh peaches and don’t overmix the topping. Try adding a handful of blueberries or raspberries for a fruity twist.
