  • 1.5 lbs. peaches pitted and diced into ½-inch pieces
  • 1-2 jalapeños seeds removed, finely diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 1 lime juice
  • 3 Tbsp. cilantro finely chopped
  • 1 Tbsp. mint finely chopped
  • 1/2 tsp. salt to taste
  • 1/4 tsp. black pepper

Salsa Instructions

  • Combine all ingredients in a large bowl. Toss until combined.
    1.5 lbs. peaches, 1-2 jalapeños, 1 cup red bell pepper, 1/2 cup red onion, 1 lime, 3 Tbsp. cilantro, 1 Tbsp. mint, 1/2 tsp. salt, 1/4 tsp. black pepper
  • Serve immediately over chicken, fish, or pork, or with tortilla chips. Store in the refrigerator for up to 2-3 days.
