For the Base:
- 1 sleeve, about 40 saltine crackers
- Parchment paper, for lining pan
For the Caramel:
- 1 cup unsalted butter
- 1 cup brown sugar light or dark
- 1/4 cup corn syrup
- 1 tsp vanilla extract
- Pinch of salt
Topping:
- 1½ cups chopped pecans
- Optional: melted chocolate for drizzling
Preheat oven to 350°F. Line a baking sheet with foil and parchment. Arrange saltine crackers in a single layer.
In a saucepan, melt butter over medium heat. Add brown sugar, corn syrup, and salt. Stir and bring to a boil.
Let the caramel bubble for 2–3 minutes, stirring constantly. Remove from heat and mix in vanilla extract.
Carefully pour the caramel over the crackers. Spread evenly with a spatula.
Sprinkle chopped pecans over the caramel. Lightly press to adhere.
Bake for 10–12 minutes until bubbly and golden around the edges.
Let it cool completely. Break into pieces once firm.
Drizzle with melted chocolate if desired. Enjoy your pecan pie bark!
