- 1 lb cheese tortellini (fresh or frozen)
- 1 lb thinly sliced beef (ribeye or flank steak)
- 1 tbsp olive oil
- 1 medium onion, thinly sliced
- 1 bell pepper, sliced
- 1 clove garlic, minced
- 1 cup beef broth
- 1 cup heavy cream
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1½ cups shredded provolone cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
Cook the tortellini according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned, then remove from skillet and set aside.
In the same skillet, sauté the onion and bell pepper for 3-4 minutes until soft. Add garlic and cook for 1 more minute.
Pour in beef broth, heavy cream, Dijon mustard, and Worcestershire sauce. Stir and let simmer for 5 minutes, allowing the sauce to thicken slightly.
Add the cooked beef and tortellini to the skillet. Stir in the provolone, mozzarella, and Parmesan cheeses until the cheese is melted and the sauce is creamy.
