Ingredients
  

  • 3 large eggs
  • 3/4 cup milk
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 1 tablespoon light brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • Butter for griddle or pan
  • 10 slices brioche bread or your favorite bread
  • Maple syrup for serving
  • Butter for serving
  • Powdered sugar for serving

Instructions
 

  • Preheat electric griddle and set aside.
  • In a 9x13 pan or large mixing bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, and pumpkin pie spice.
  • Butter the preheated griddle.
  • Dip both sides of each bread slice into the pumpkin mixture, letting it soak briefly.
  • Place slices on the griddle and cook until golden brown, about 3–4 minutes per side.
  • Repeat with remaining bread and custard mixture.
  • Serve warm with maple syrup, extra butter, and powdered sugar if desired.
