- 3 pounds red potatoes rinsed and quartered
- ¼ cup olive oil
- 8 cloves garlic finely minced
- 1 cup grated parmesan cheese divided
- Salt to taste
- Black pepper to taste
- 2 tablespoons unsalted butter melted
- 3 tablespoons fresh parsley chopped
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
In a large bowl, toss quartered potatoes with olive oil, garlic, ¾ cup parmesan, salt, and pepper until well coated.
