Ingredients
  

  • 1–2 large baking potatoes, washed and cubed
  • 7 oz (200 g) block of feta cheese
  • 2 tbsp olive oil, divided
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic, top sliced off
  • 1 lemon, quartered
  • 1 tbsp honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions
 

  • Preheat oven to 390°F (200°C). Cube potatoes and place in a baking dish.
  • Drizzle 1 tbsp olive oil over potatoes. Add thyme, oregano, salt, and pepper. Toss to coat.
  • Place feta block in the center. Press one side into seasonings, then flip. Add garlic head and half the lemon wedges. Drizzle with remaining oil.
  • Bake for 45–50 minutes until potatoes are golden. Remove garlic if browning early.
  • Mash roasted garlic into a paste. Mix with potatoes, feta, lemon juice, and basil.
  • Drizzle honey and sprinkle extra basil. Serve roasted potatoes with baked feta and garlic hot!

Notes

For crispier roasted potatoes with baked feta and garlic, soak potatoes in cold water for 30 minutes before cubing. Variation: Add cherry tomatoes halfway through baking for a juicy, colorful twist that complements the creamy feta.
