Ingredients
  

For the Turkey Sausage Patties:

  • 1 pound ground turkey
  • 1 tsp dried sage
  • ¾ tsp salt
  • ½ tsp black pepper
  • ¼ tsp dried thyme
  • ¼ tsp red pepper flakes
  • ¼ tsp ground nutmeg
  • 1 tsp olive oil

For Assembly:

  • 6 English muffins, split
  • 6 large eggs
  • 2 tbsp butter
  • 6 slices cheddar cheese
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions
 

  • In a bowl, combine ground turkey, sage, salt, pepper, thyme, red pepper flakes, nutmeg, and olive oil. Mix gently and form into 6 patties slightly larger than the English muffins.
  • Heat 1 tablespoon vegetable oil in a skillet over medium heat. Cook turkey patties for 4-5 minutes per side until browned and internal temperature reaches 165°F. Transfer to a plate.
  • Split and toast the English muffins. Lightly butter each half.
  • Wipe out the skillet and return to medium heat with remaining oil and 1 tablespoon butter. Crack eggs into the pan and cook until whites are set but yolks are slightly runny, about 3-4 minutes. Season with salt and pepper.
  • To assemble your sausage egg and cheese muffins, place a turkey patty on the bottom half of each English muffin. Top with cheese, followed by the egg, and crown with the top half of the muffin.

Notes

For meal-prep friendly sausage egg and cheese muffins, let components cool completely before assembling, then wrap individually in parchment paper and foil before freezing. Try using ground chicken as a variation, or add avocado and hot sauce for extra flavor.
