Main Ingredients

  • 1 package gnocchi store-bought
  • 2 cups mixed vegetables such as bell peppers, zucchini, and broccoli
  • 3 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon fresh herbs such as basil or parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Spread the gnocchi and mixed vegetables on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss gently to combine.

Cooking

  • Roast in the oven for 25-30 minutes, stirring once, until the gnocchi are golden and the vegetables are tender.
  • Remove from the oven and garnish with fresh herbs before serving.

Notes

For added flavor, feel free to experiment with different vegetables based on the season. Store leftovers in an airtight container in the fridge for up to 3 days. When reheating, the oven will keep the gnocchi crispy.
