Ingredients
  

  • 1 slice of whole grain bread (or sourdough, gluten-free)
  • ½ ripe avocado
  • 1 large egg
  • Lemon juice (optional, a small squeeze)
  • Salt and pepper to taste

Optional toppings:

  • Red pepper flakes, fresh herbs, hot sauce, feta cheese, or smoked salmon

Instructions
 

  • Toast the Bread
    Begin by toasting the bread until it’s golden and crispy. You can use a toaster, oven, or grill for this step. Aim for a light crisp without over-toasting.
  • Prepare the Avocado
    While the bread is toasting, cut the avocado in half. Remove the pit, scoop out the flesh, and place it into a bowl. Mash the avocado with a fork until smooth. Add salt, pepper, and a squeeze of lemon juice for extra freshness.
  • Cook the Egg
    You can prepare the egg in any style you prefer:
    Fried Egg: Heat a small frying pan over medium heat, add a tiny bit of oil or butter, and crack the egg into the pan. Cook until the whites are set, but the yolk remains runny.
    Poached Egg: Bring a pot of water to a gentle simmer, add a splash of vinegar, and carefully drop in the egg. Cook for 3-4 minutes, then remove with a slotted spoon.
    Boiled Egg: For soft-boiled, cook for 6 minutes. For hard-boiled, cook for 12 minutes.
    Scrambled Egg: Whisk the egg and cook gently in a frying pan, stirring constantly until fluffy.
  • Assemble the Toast
    Once the bread is toasted and the egg is cooked to your liking, spread the mashed avocado evenly on the toast. Place the cooked egg on top. Feel free to add any optional toppings like red pepper flakes, fresh herbs, or a drizzle of hot sauce.
