Ingredients
  

  • 2 tablespoons oil
  • 1 tablespoon butter
  • 1 large carrot diced or grated
  • 1 yellow onion diced
  • 1 garlic clove minced
  • Salt to taste
  • Ground black pepper to taste
  • 1 tablespoon paprika mild, spicy, or smoked
  • 1 tablespoon all-purpose flour
  • 4 –5 cups vegetable or chicken broth or water + 1 bouillon cube
  • 2 large potatoes about 14 oz, peeled and diced small
  • 1 –3.5 ounces heavy cream adjust to taste
  • 1 –2 tablespoons fresh parsley or 1 teaspoon dried

Instructions
 

  • Heat oil and butter in a medium pot over medium heat. Add carrot, onion, and garlic. Sauté until soft and fragrant, about 5–7 minutes.
  • Stir in paprika, salt, pepper, and flour. Cook for 1–2 minutes to deepen the flavors.
  • Pour in broth (or water + bouillon) and bring to a boil while stirring.
  • Add diced potatoes and reduce to a simmer. Cook for 25 minutes, stirring occasionally.
  • Stir in heavy cream and simmer for another 5–10 minutes until creamy and rich.
  • Turn off the heat and stir in chopped parsley.
  • Taste and adjust seasoning.
  • Serve warm with toppings like shredded cheese or croutons if desired.

Notes

For extra richness, try adding a spoonful of sour cream before serving. To spice up this simple potato soup, use smoked paprika or a pinch of chili flakes.
