Ingredients
  

For the Cobbler Batter:

  • 1/3 cup unsalted butter melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons ground cinnamon

For the Topping & Sauce:

  • 1 1/2 cups brown sugar packed
  • 1 1/2 cups hot water
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Pour melted butter into a 9×13-inch baking dish and spread evenly.
  • In a large bowl, whisk together milk, vanilla, and sugar until mostly dissolved.
  • Add flour, baking powder, salt, and cinnamon. Whisk until just combined—do not overmix.
  • Spoon batter over the butter in the dish. Do not stir.
  • Sprinkle brown sugar evenly over the batter.
  • Carefully pour hot water over the top. Again, do not stir.
  • Bake for 30–35 minutes, until golden and bubbling. Sprinkle with cinnamon sugar topping right after baking.

Notes

For an extra treat, serve your Snickerdoodle Cobbler warm with vanilla ice cream. Try adding thin apple slices under the batter for a delicious fall twist.
