Ingredients

  • 1 9-inch pie crust
  • 4–5 Roma or beefsteak tomatoes, sliced
  • ½ tsp salt
  • ¼ cup freshly chopped basil leaves
  • 2 garlic cloves, finely minced
  • 1 cup grated mozzarella cheese
  • 1 cup grated sharp cheddar cheese
  • ¾ cup mayonnaise
  • 1 tsp ground black pepper
  • ½ cup butter cracker crumbs about 12 crackers

Instructions

  • Preheat oven to 350°F (175°C).
  • Place the pie crust in a pie dish, cover with parchment, fill with weights or beans, and blind bake for 20 minutes. Remove weights and cool.
  • Lay sliced tomatoes on paper towels, sprinkle with salt, and let sit for 10 minutes. Pat dry to remove moisture.
  • Layer tomatoes and chopped basil in the cooled crust, reserving a few tomato slices for topping.
  • In a bowl, combine mayonnaise, garlic, mozzarella, cheddar, and black pepper.
  • Spread the cheese mixture evenly over the tomato layers.
  • Top with butter cracker crumbs and remaining tomato slices.
  • Bake for 40–45 minutes until bubbly and golden brown. Cool 15 minutes before slicing.

Notes

Tip: Always salt and drain the tomatoes to avoid soggy pie.
Variation: Add crumbled cooked bacon for a smoky twist on this Southern Tomato Pie.
