  • 1/4 cup olive oil extra virgin
  • 1/2 teaspoon red pepper flakes adjust to taste

Preparation

  • Rinse the kale leaves and tear them into bite-sized pieces. Remove any thick stems.

  • In a large bowl, sprinkle salt over the kale and massage until tender, about 5 minutes.
  • Add olive oil, red pepper flakes, and lemon juice. Toss to combine well.
  • Let the salad sit for 10 minutes to enhance flavors.

Notes

For best texture, enjoy the salad fresh. Store leftovers in an airtight container in the fridge for up to 3 days. If you make it ahead, keep the dressing separate until ready to serve.
