Sweet Potato Bites
- 2 medium sweet potatoes about 1¼ pounds, sliced into 1/8-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Yogurt Lime Drizzle
- 0.5 cup plain Greek yogurt
- 1 tablespoon lime juice
- 2 tablespoons cilantro chopped
Sweet Potato Bites
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss sweet potato slices with olive oil, chili powder, garlic powder, salt, and black pepper until evenly coated.
Arrange the rounds in a single layer on the prepared sheet and roast for 20 minutes. Flip each slice halfway through.
Roast for an additional 10 minutes, or until edges are crisp and centers are tender.
Yogurt Lime Drizzle
While potatoes roast, whisk together Greek yogurt, lime juice, and chopped cilantro until smooth.
Drizzle over warm Sweet Potato Bites and serve immediately.
Let the Sweet Potato Bites cool for a few minutes on the sheet before removing to maintain crisp edges.
