Sweet Potato Bites

  • 2 medium sweet potatoes about 1¼ pounds, sliced into 1/8-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Yogurt Lime Drizzle

  • 0.5 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro chopped

Instructions
 

Sweet Potato Bites

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss sweet potato slices with olive oil, chili powder, garlic powder, salt, and black pepper until evenly coated.
  • Arrange the rounds in a single layer on the prepared sheet and roast for 20 minutes. Flip each slice halfway through.
  • Roast for an additional 10 minutes, or until edges are crisp and centers are tender.

Yogurt Lime Drizzle

  • While potatoes roast, whisk together Greek yogurt, lime juice, and chopped cilantro until smooth.
  • Drizzle over warm Sweet Potato Bites and serve immediately.

Notes

Let the Sweet Potato Bites cool for a few minutes on the sheet before removing to maintain crisp edges.
Store in an airtight container in the refrigerator and reheat at 375°F for 8–10 minutes to revive crunch.
