  • 1 medium sweet potato
  • 1 cup warm water about 105-108F
  • 2 and 1/4 teaspoon active dry yeast
  • 2 tablespoons white sugar
  • 2 tablespoons canola oil or other neutral oil
  • 1 and 1/2 teaspoons table salt
  • 3 to 4 cups all-purpose flour

  • Heat the oven to 400F. Pierce the sweet potato several times, place on a baking sheet, and bake for 45 minutes to an hour until soft.
  • Stir together warm water, yeast, and sugar. Cover and let sit for 10 minutes until foamy.
  • Add mashed sweet potato, canola oil, and salt to yeast mixture. Stir until smooth and add flour gradually until dough is slightly sticky.
  • Turn dough onto a floured surface, knead for 5-6 minutes until elastic.
  • Place dough in a lightly oiled bowl, cover, and let rise for 1 hour until doubled in size.
  • Divide dough into 6 pieces, form into buns.
  • Place on parchment-lined baking sheet, cover, and let rise for 15-20 minutes.
  • Preheat the oven to 350F. Bake buns for 25-30 minutes until lightly browned.
  • Remove from oven and cool on a rack.
