Ingredients
  

Filling

  • 6 medium apples diced into chunks
  • 5 teaspoons lemon juice
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 2 tablespoons corn starch

Topping

  • 3/4 cup brown sugar
  • 1/2 cup whole wheat flour
  • 3/4 cup rolled oats
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil melted
  • 1/3 cup vegan butter melted

Instructions
 

Filling

  • Cut apples into chunks and place into a large mixing bowl. Add lemon juice, sugars, cinnamon, salt, and corn starch. Stir together and set aside to marinate.

Topping

  • In another bowl, combine topping ingredients except for oils and butter. Melt coconut oil and vegan butter, add to bowl, and stir to combine until mixture resembles wet sand.
  • Pour apple mixture into a greased baking dish, spread topping evenly. Bake at 350 degrees for 55-60 minutes until apples are bubbly and top is browned.
  • Let cool for 15-20 minutes before serving. Enjoy alone or with vegan ice cream.
