Ingredients
  

For the Feta Fried Egg:

  • cup crumbled feta cheese
  • 1 large egg
  • 1 tsp olive oil

For the Tortilla Topping:

  • ½ avocado
  • Pinch of salt
  • 1 tsp lemon juice
  • 1 6- inch tortilla corn, flour, or nut-based
  • 1 tsp chopped fresh chives

Instructions
 

  • Heat a small non-stick skillet over medium-high heat. Add olive oil.
  • Crumble feta evenly into the skillet. Crack the egg into the center.
  • Cover and reduce heat to medium-low. Cook for 2–3 minutes until the egg white sets and feta crisps.
  • Mash avocado with salt and lemon juice in a bowl.
  • Char the tortilla in a pan for 30 seconds per side.
  • Spread avocado on the tortilla. Top with viral feta fried eggs and chives.

Notes
