- 6 cups fresh watermelon, cubed (about half a medium watermelon)
- 8 oz feta cheese, crumbled or cubed
- 1 small red onion, thinly sliced
- 1 cucumber, seeded and diced
- 1/4 cup fresh mint leaves, roughly chopped
- 1/4 cup fresh basil leaves, torn
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Cut the watermelon into 1-inch cubes, removing any seeds, and place in a large serving bowl.
Add the crumbled feta cheese, sliced red onion, diced cucumber, chopped mint, and torn basil to the bowl.
In a small bowl, whisk together olive oil, lime juice, and honey until well combined. Season with salt and pepper.
Pour the dressing over the watermelon feta salad and gently toss to coat all ingredients evenly.
