Ingredients
  

  • 6 cups fresh watermelon, cubed (about half a medium watermelon)
  • 8 oz feta cheese, crumbled or cubed
  • 1 small red onion, thinly sliced
  • 1 cucumber, seeded and diced
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper

Instructions
 

  • Cut the watermelon into 1-inch cubes, removing any seeds, and place in a large serving bowl.
  • Add the crumbled feta cheese, sliced red onion, diced cucumber, chopped mint, and torn basil to the bowl.
  • In a small bowl, whisk together olive oil, lime juice, and honey until well combined. Season with salt and pepper.
  • Pour the dressing over the watermelon feta salad and gently toss to coat all ingredients evenly.
  • For best flavor, refrigerate for 15-30 minutes before serving to allow the flavors to blend together.

Notes

For the best watermelon feta salad, use a ripe, sweet watermelon and chill all ingredients before assembly. Try adding kalamata olives and a sprinkle of oregano for a more traditional Mediterranean variation that enhances the sweet-savory contrast.
