For the Shrimp:
- 1 lb large shrimp peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Salt and pepper to taste
For the Bowls:
- 2 cups cooked rice white or brown
- 1 ripe avocado diced
- 1/2 cup cherry tomatoes halved
- 1/4 cup red onion thinly sliced
- 1/4 cup chopped cilantro
For the Cilantro Lime Sauce:
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- 1 tbsp water
- 1/4 tsp salt
- Pinch of black pepper
In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Let sit for 5 minutes.
Heat a large skillet over medium-high. Cook shrimp in a single layer, 2–3 minutes per side, until pink and opaque. Set aside.
Whisk together all sauce ingredients in a small bowl until smooth. Chill until serving.
Divide rice into 4 bowls. Top each with shrimp, avocado, tomatoes, red onion, and cilantro.
