Ingredients
  

Zucchini Mixture

  • 1.5 lbs zucchini grated (about 2 large zucchini)
  • 0.25 medium yellow onion finely diced
  • 1 clove garlic minced
  • 3/4 cup all-purpose flour
  • 1/4 cup grated parmesan cheese
  • 1 large egg lightly beaten
  • 1 tsp salt divided
  • 1/2 tsp freshly cracked black pepper

Cooking

  • 3 Tbsp cooking oil

Instructions
 

Zucchini Mixture

  • Wash the zucchini, grate, and squeeze out excess moisture. Combine with onion, garlic, flour, parmesan, egg, salt, and pepper until well mixed.

Cooking

  • Heat oil in a non-stick skillet over medium-high heat, add spoonfuls of the mixture, flatten, and cook until both sides are golden brown. Serve hot.
