Zucchini Mixture
- 1.5 lbs zucchini grated (about 2 large zucchini)
- 0.25 medium yellow onion finely diced
- 1 clove garlic minced
- 3/4 cup all-purpose flour
- 1/4 cup grated parmesan cheese
- 1 large egg lightly beaten
- 1 tsp salt divided
- 1/2 tsp freshly cracked black pepper
Zucchini Mixture
Wash the zucchini, grate, and squeeze out excess moisture. Combine with onion, garlic, flour, parmesan, egg, salt, and pepper until well mixed.
Cooking
Heat oil in a non-stick skillet over medium-high heat, add spoonfuls of the mixture, flatten, and cook until both sides are golden brown. Serve hot.
