Zucchini Slice is an easy and budget-friendly Australian dish with fresh zucchini and a cheesy egg-based batter.

Ingredients
  

  • 1 Tbsp butter
  • 2 strips bacon
  • 1 yellow onion diced
  • 5 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup self-rising flour
  • 1/4 cup olive oil
  • 3/4 lb zucchini 2 cups shredded
  • 1 pinch salt and pepper

Instructions
 

  • Preheat the oven to 350ºF and line a baking dish with parchment. Dice onion and chop bacon.
  • Heat butter in a pan. Cook bacon and onion until the onion softens and bacon is golden. Cool slightly.
  • Grate zucchini into a colander. Sprinkle with salt and set aside.
  • In a bowl, combine bacon, onion, eggs, cheese, flour, and oil. Squeeze excess moisture from zucchini and add to the bowl. Stir to combine. Season with salt and pepper.
  • Pour mixture into the baking dish. Bake for 35-40 minutes until firm. Cool and cut into squares to serve.
